Sugar Cookies with Vanilla Butter Frosting

Cookies
2 1/2 cups sugar
2 cups butter, softened
3 eggs
1 t. baking soda
1 t. salt
3 t. vanilla
6 1/2 cups flour

In a mixing bowl, beat the sugar, butter, eggs, baking soda, salt and vanilla until fluffy. Add the flour, blending thoroughly. Divide the dough into four pieces and wrap each separately in plastic wrap. Refrigerate 1 hour.
Preheat oven to 350 degrees.
Take out one piece of dough, leaving the rest in the fridge until ready to use. (Cold dough makes better cookies.) Roll the dough between two pieces of waxed paper to desired thickness. Cut out with cookie cutters.
Place the cookies on a cold baking sheet that has been covered with parchment paper. (Rinse the baking sheets with cold water between batches so they are cold when they go in the oven.)
Bake 9 minutes. Do not over bake. Let cool on cookie sheet for 2 min before cooling on rack. Decorate as desired.

Frosting
6 C. powder sugar
2/3 C. margarine or butter softened
3t. vanilla extract
approximately 4 T. milk
food coloring if desired

Blend powdered sugar and butter. Add vanilla and milk one tablespoon at a time. Beat until smooth.

Both of these are large recipes and can be halved.

Pumpkin Chocolate Chip Cookies

I love pumpkin anything! But I like it to be somewhat healthy so I added 1/2 cup applesauce and took out 1/2 cup of the butter. They tasted great!

Pumpkin Chocolate Chip Cookies

Cream together:
1/2 cup white sugar
1 cup brown sugar
1/2 cup butter, softened
1/2 cup applesauce

Then add:
1 cup pumpkin
1 tsp vanilla
1 egg

Sift together dry ingredient then add to above wet mixture.
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 tsp salt

Add 1 cup milk chocolate chips. Bake cookies at 350 degrees for 12 minutes. Allow to cool then frost.

Icing:
In saucepan, heat 3 Tb butter and 1/2 cup brown sugar over medium to med-high heat until bubbling and thick. Cool 10 minutes. Stir in 1/4 cup milk. Add 2 cups of powdered sugar and beat until smooth.

Easy Fast Chocolate Chip Cookies

1/2 c shortening
1/2 c sugar
1/4 c brown sugar
1 egg
1 tsp vanilla

Cream above ingredients together Add 1 1/4 cups flour, 1 tsp salt, and 1 tsp soda. Mix well. Add 1/2 cup chocolate chips. Place on cookie sheet and bake 10-12 minutes or until done.

This only makes about 2 dozen or less depending on how big you make them. Fast to mix together and fast to bake!

Pumpkin Cookies

1 cup butter
1 cup sugar
1 cup canned pumpkin
1 egg
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
chocolate chips (optional)

Cream butter sugar, pumpkin. Add the egg and combine with the rest of the dry ingredients. Stir in chocolate chips if you want.

375 for fifteen min

You can frost these with cream cheese frosting if you like frosting with pumpkin cookies.

Pumpkin Spice Blossoms

I haven't tried it, but they sound really good. I think you could use a regular chocolate kiss if you can't find the pumpkin flavor. Yum!


Pumpkin Spice Blossoms
1 Spice Cake Mix 18.25 oz
14 oz can Libby’s Pumpkin
½ Cup sanding sugar
1 bag Hershey’s Pumpkin Spice Kisses
1. Preheat oven to 350 degrees F. In a stand or electric mixer beat the cake mix and pumpkin until well combined, about 45 seconds. With a cookie scoop, scoop dough and roll top half in sanding sugar (dough is sticky) then place onto a parchment or silpat lined baking sheet. Bake for 11-13 minutes, or until cooked through. Quickly transfer to a cooling rack and immediately press kisses into the center of each cookie. I immediately place cooling rack into the fridge for 15 minutes so the kisses don’t melt. I tried both ways and it melts down if just left at room temperature. Enjoy!
About 36 cookies
Update:
I tried this recipe and I made a few modifications. The cookies turned out good and everyone thought they were yummy. I used regular sugar instead of the sanding sugar and chocolate kisses instead of pumpkin flavor. I thought the dough was too sticky to handle and roll in the sugar, so I just sprinkled some on the top of the dough after it was on the cookie sheet. I used a greased cookie sheet instead of the parchment paper.

Devil's Food Surprise Cookies

Devils Food Cake Mix
2 eggs
1/3 cup oil
"Rollos" candy

Mix cake mix, eggs and oil. Place about 1 teaspoon of mixture in hand and flatten, place one rollo in the center and roll into ball. Place on an ungreased cookie sheet.

Bake7-10 minutes at 350 degrees.
Sprinkle with powdered sugar after baking.

Makes about 3 dozen cookies.

These are so yummy! It looks like a regular chocolate cookie and then you take a bite and there is carmel in the middle!
